A jar of ghee on a shelf tells you almost nothing about how it got there. Behind every batch is a farmer, a herd of cows, and a production process that either respects the traditional method or quietly cuts corners on it. Here is a look at that part of the story.

It starts with small-scale dairy farmers

Authentic Bilona ghee comes from small farms rearing indigenous Gir cows, not large industrial dairies. These are typically family-run operations where the herd is small enough to actually know each animal, a very different picture from large-scale commercial dairy.

Why the farmer relationship actually matters for quality

Ghee quality starts with milk quality, and milk quality starts with how the cows are fed, milked and cared for. A rushed, high-volume operation and a smaller farm focused on traditional practice produce genuinely different starting material, before the ghee-making process even begins.

  • The curd is hand-churned (the bilona method) to separate butter
