Ask most people what is in ghee and you will get some version of "fat, and I guess flavour." Vitamin K2 rarely comes up, which is odd, because it is one of the more genuinely interesting nutrients tied to grass-fed dairy fat, and most people have never heard of it.

What Vitamin K2 actually is

Vitamin K2 is a fat-soluble vitamin, distinct from the more commonly known Vitamin K1 found in leafy greens. It is involved in directing calcium to where the body needs it, primarily bones and teeth, rather than where it does not, like soft tissue.

Why it shows up in ghee at all

K2 is produced by certain bacteria and is found in fermented foods and animal fats, particularly from grass-fed or pasture-raised animals. Ghee made from the milk of grass-fed cows carries more K2 than ghee from grain-fed dairy, which is one of the more concrete, measurable differences between the two.

Why most people have never heard of it

K2 has historically gotten far less research attention and public awareness than K1, calcium, or Vitamin D, despite growing interest in nutrition circles about its role in how the body actually uses calcium.
